When I discovered quinoa in 2009 I became hooked on this healthy, ancient grain. Shortly after that I created this recipe which became one of my favorite meals & Signature Recipes!
Za'atar is a spice blend found in many Middle Eastern dishes & is uniquely earthy, savory & extremely aromatic. This dish I created is very popular at my house. I mostly serve it in the spring, summer & early fall months, as it is at it's best when served barely warm or at room temperature.
Earthy & creamy is the best way to describe this delectable meal. You can prepare everything in advance, cover & refrigerate, then cook it up in no time at all. In my house there's never any leftovers... what does that tell you?!

This mouthwatering meal is one you'll want to make over & over again, especially on busy days. It's very easy to put together & cleanup is so easy!
This recipe has a lot of ingredients, but comes together quickly & makes a great summertime meal. This also makes 4 to 5 delicious chicken salad sandwiches on your favorite bread. Whenever possible use organic ingredients.

It's hard to pick a favorite recipe in a category, but because I make this more often than any other chicken dish & I actually get cravings for it, I'll have to say this is my favorite. I almost always pair this chicken with Jasmine Rice (see recipe in Rice & Grains category) & a vegetable or a side salad. There's something about the combination of the tangy chicken along with the nutty flavor of the Jasmine Rice that always gets my mouth watering!
