Easy to make & so much healthier than store bought salad dressing, having no additives or preservatives. Makes a delicious marinade as well!

This is one of my favorite, super healthy side dishes during the Fall & holiday season. Everybody loves this & always asks if I'll be making it at Thanksgiving. I've also served this alone as a fabulous & satisfying dish for lunch or a light dinner.
Serves: 2 to 4 as a side dish / 2 for lunch or light dinner
One evening while I was eating Mashed Potatoes alongside some Roasted Cauliflower, the taste of the two married together was so delicious I just had to create a recipe for it. This combination brings a whole new level of flavor & nutrients to Mashed Potatoes. It's also a clever way to sneak precious veggies into your kid's diet. They can't see the cauliflower & so they'll devour this just as though they were eating regular Mashed Potatoes!
Yield: Approximately 12 - 1 cup servings

This delicious, comforting, healthy side dish is a welcome addition to any holiday meal. It's so easy to prepare & so yummy, that you'll want to serve it all year round. I created this dish in the early 1970's when I cooked my very first Thanksgiving meal & I've been serving it ever since. No matter who I invited over for the holidays, they always asked me if I was going to serve this, and of course I said yes!

Relatively low in calories compared to traditional creamy style dressings, you'll want to add this to your salad dressing rotation for sure!

Amandine (pronounced "ah-mahn-DEEN") refers to a dish that is served garnished with sliced or slivered almonds. Trout, green beans & asparagus are frequently prepared in the amandine style. This recipe is so delish & is a great pairing with many foods such as fish, chicken & steak. It's very easy to make & cleanup is minimal!
