Zoodles, How To Make
What the heck are Zoodles you ask?! Zoodles are noodles made from zucchini squash. They’re very easy to make, delicious, take away a lot of the calories & create a much healthier meal when you use them in place of pasta in your dishes. Using this technique, you can also make noodles from butternut squash & other hard to semi-hard vegetables.
You will need a spiralizer tool to create the Zoodles. Either a hand spiralizer, like a “Vegetti” or “Vegetti Pro” or other brand, which you can find in kitchen/cooking stores, Walmart & Amazon.com. If you’re fortunate enough to have a Kitchen Aid mixer, they have a fantastic spiralizer attachment which not only creates Zoodles & other vegetable noodles, but can also core, peel & slice items like apples & such. It’s a great time saving tool, I love mine & use it often.
There no limit as to what you can do with Zoodles & other veggie noodles. Use them in salads, slaws, soups, casseroles, on top of pizza & so on. You’re only limited by your imagination. Once you try these you’ll be using Oodles of Zoodles all the time & your kids will love them too!
Yield: as a general rule of thumb; 1 small or 1/2 large zucchini makes enough Zoodles for 1 serving (depending on your appetite).
Ingredients
Zucchini, preferably organic. For best results; when shopping, pick ones that are as straight as you can find.
Directions
1. Wash the zucchini with a vegetable wash & dry thoroughly.
2. Follow the directions that come with whatever spiralizer tool you’re using, it’s just that easy!
3. Once you’ve got your Zoodles made, pile them up on a cutting board & slice them in half or into 4ths (like a pie). This will make the lengths shorter so they’re easier to eat.
4. You can make these ahead of time if you need to. Simply place in a glass bowl, cover & refrigerate. I’ve stored them for up to 24 hours & they were just fine when I pulled them out to cook them. You may even be able to stretch the time out a little further.

Cooking Directions for 2 servings:
To cook Zoodles to use in place of spaghetti/linguine is quick & easy…
1. Heat 1 Tblsp EVOO (extra-virgin olive oil), in a cast iron skillet, on med-high for 2 to 3 minutes till very hot.
2. Add Zoodles & fry, gently stirring almost constantly, for 2 to 4 minutes. Do not overcook. If there’s a lot of liquid in the skillet, just drain it out.
3. Immediately place in serving bowls & top with your favorite pasta sauce. Add some shredded parmesan cheese & chopped fresh basil or parsley if you like & serve.
