Ring in the Fall season with this colorful, delicious, hearty dish alongside a nice steak, lamb chops or chicken. You could also serve this as a vegetarian meal.

Carne Adobado

Carne Adobado

Carne Adobado is basically chile marinated shredded pork. Mostly used as a filling for tacos, burritos, enchiladas & quesadillas, but you could also serve a pile of it on a plate with couple of side dishes like Refried Beans & so on. It's hard to say how many servings you'll get from this recipe, it all depends how you serve it. I like to make this & then freeze it in portioned containers & it'll last quite a long time... so it's well worth the effort!

Roasted Lemon Potatoes

Roasted Lemon Potatoes

These potatoes are so delicious & easy to make. They compliment so many different dishes, especially seafood & steak. I love making a batch or two & freezing them in portions, so I always have some on hand ready to defrost & reheat when needed.

Zoodles, How To Make

Zoodles, How To Make

What the heck are Zoodles you ask?! Zoodles are noodles made from zucchini squash. They're very easy to make, delicious, take away a lot of the calories & create a much healthier meal when you use them in place of pasta in your dishes. Using this technique, you can also make spiralzed noodles from butternut squash & other hard to semi-hard vegetables.

There no limit as to what you can do with Zoodles & other veggie noodles. Use them in salads, slaws, soups, casseroles, on top of pizza & so on. You're only limited by your imagination. Once you try these you'll be using Oodles of Zoodles all the time & your kids will love them too!

Pho Ga

Pho Ga

Pho (pronounced "Fuh") is a hearty, traditional Vietnamese noodle soup originally made with beef. Pho Ga is the version made with chicken. You can also use turkey, which is a great way to use up some leftovers after Thanksgiving. No matter how you make it, it's absolutely delicious!

Yummy when served with heated Naan bread (see Tip# 2) & my Peach Apricot Ginger Spread (see recipe in Bakery, Breads & Spreads category).

Holiday Fruit Side Dish

Holiday Fruit Side Dish

This delicious, comforting, healthy side dish is a welcome addition to any holiday meal. It's so easy to prepare & so yummy, that you'll want to serve it all year round. I created this dish in the early 1970's when I cooked my very first Thanksgiving meal & I've been serving it ever since. No matter who I invited over for the holidays, they always asked me if I was going to serve this, and of course I said yes!

Relatively low in calories compared to traditional creamy style dressings, you'll want to add this to your salad dressing rotation for sure!

Vegetarian Stir-fry

Vegetarian Stir-fry

A healthy recipe for #MeatlessMonday or #FoodieFryday... this is one of those dishes that's extremely versatile, easy to put together & cooks up in a flash! These are the ingredients I use most often, however you can replace any of the vegetables with another you like or happen to have in the frig that needs to be used up (see Tip# 5). Keep in mind that certain vegetables take longer than others to cook.

Asparagus Amandine

Amandine (pronounced "ah-mahn-DEEN") refers to a dish that is served garnished with sliced or slivered almonds. Trout, green beans & asparagus are frequently prepared in the amandine style. This recipe is so delish & is a great pairing with many foods such as fish, chicken & steak. It's very easy to make & cleanup is minimal!
