Broccoli Stir-fry with Special Sauce

A delicious vegetarian dinner for #MeatlessMonday or #FoodieFryday, a favorite in my house especially when served with Fried Bananas on the side! You could also leave out the Fried Bananas & just serve this as a vegetable side dish with meat, chicken or seafood.
Serves: 2
Ingredients
For the Special Sauce:
1 Tblsp pomegranate molasses (see Tip# 1)
Optional for spicy heat: 1/8 tsp Sriracha sauce

Cooked Jasmine Rice for serving - 1 cup per person

For the Stir-fry:
2 cups bite-sized broccoli florets
2/3 of a red bell pepper, seeded & cut into short strips
2 - 1/2' thick slices of red onion, cut into half moons, separate layers & cut larger pieces in half
1 Tblsp House of Tsang Stir-Fry Oil (see Tip# 2)

For serving:
Optional for garnishing: crumbled goat cheese & Toasted Pine Nuts (see recipe in Fruit & Nuts category)
Fried Bananas (pomegranate version) for serving (see recipe in the Fruit & Nuts category)
Directions
1 Add the Special Sauce ingredients to a small bowl & whisk till completely combined. Cover & refrigerate 3 hours or overnight to allow the ingredients to marry. Re-whisk before using.
2 Cook Jasmine Rice & set aside till ready to serve (see recipe in Rice & Grains category).
3 Heat a wok or large cast iron skillet on high for about 2 minutes, till it's very hot.
4 Add oil, reduce heat to med-high & immediately add vegetables.
5 Stir-fry 4 to 6 minutes till crisp-tender & showing some char.
6 Remove from heat & stir in the Special Sauce till well coated.
7 Add 1 cup rice to each serving plate & make a well in the center. Top with cooked veggies
8 Garnish with goat cheese & pine nuts (if using) & serve with Fried Bananas (pomegranate version) on the side.
Tips & Suggestions
1 If you can't find pomegranate molasses locally, you can order pomegranate molasses syrup online from Amazon.com.
2 You can find House of Tsang Stir-Fry Oil in most supermarkets in the International/Asian food section. If you can't find that brand, use another garlic infused, high-heat oil.

That pomegranate molasses would be such an interesting combination with the Asian flavors, and the glaze is beautiful.
Delicious recipe! I made it with ½ tsp Sriracha for a little more spicy heat.
Oooh, that special sauce! What a nice combination of sweet, heat and acid. A wonderful way to jazz up vegetables… then the rice to sop up any flavor that might get away otherwise. Deliciousness!
