This delicious, comforting, healthy side dish is a welcome addition to any holiday meal. It's so easy to prepare & so yummy, that you'll want to serve it all year round. I created this dish in the early 1970's when I cooked my very first Thanksgiving meal & I've been serving it ever since. No matter who I invited over for the holidays, they always asked me if I was going to serve this, and of course I said yes!

Serves 6 to 8

Lemon Pesto Salmon

Revised & updated 2/6/2021 - Easy to put together & goes from oven to table in no time. The cooking method insures that the salmon is very tender, succulent, delicious & the cleanup is basically nonexistent. which is always a plus! For a complete meal, serve with Jasmine Rice on the side.

This is one of my favorite indulgences. Years ago I used to eat both bagel halves in one sitting. Now, with the price of lox up in the stratosphere & in order make this meal lighter & healthier, I only eat half the bagel & compliment it with a side salad with a little dressing on top. Without the side salad this makes an easy breakfast, with the salad it's great for brunch or lunch.

This is one of my favorite soups, especially in the Fall & Winter months! Not only are all the ingredients healthy for you on so many levels, but it's very creamy, so delicious & easy to make. I love to serve this with warmed up, crusty, multigrain rolls & butter.
