This delicious, comforting, healthy side dish is a welcome addition to any holiday meal. It's so easy to prepare & so yummy, that you'll want to serve it all year round. I created this dish in the early 1970's when I cooked my very first Thanksgiving meal & I've been serving it ever since. No matter who I invited over for the holidays, they always asked me if I was going to serve this, and of course I said yes!

Serves 6 to 8

Easy to put together & goes from oven to table in no time. The cooking method insures that the salmon is very tender, succulent, delicious & the cleanup is basically nonexistent. which is always a plus! For a complete meal, serve with Jasmine Rice on the side.

This is one of my favorite indulgences. Years ago I used to eat both bagel halves in one sitting. Now, with the price of lox up in the stratosphere & in order make this meal lighter & healthier, I only eat half the bagel & compliment it with a side salad with a little dressing on top. Without the side salad this makes an easy breakfast, with the salad it's great for brunch or lunch.
