I'm picky with my tomato paste that's why I make it a point to make my own. While you can conveniently just pick any tomato paste from the supermarket, Grandma's traditional tomato paste is entirely different and utterly more delicious. I'm confident that you'd agree after you try my Grandma's recipe that's why I'm sharing it here.
Handed down to me from my Nana... this casserole is loaded with dairy, but it's ooooh so delish & a true comfort food. You'll be craving it once you taste it!

I love mushrooms in my pasta sauce & when I used to buy mushroom pasta sauces in the grocery store, you could actually see good sized pieces of mushrooms in the jar. Not anymore, in the decades since the 1980's, the mushrooms have basically disappeared. So, when I buy pre-made pasta sauce, I always jazz it up with mushrooms myself!

I developed this comfort food recipe in the late 1960's while I was still in high school. I always loved the combination of cottage cheese & sour cream and since I also loved macaroni, it was an obvious pairing in my mind. Once I tasted it, I was hooked. Over the years I've made a few changes to the recipe to make it a little healthier, like using whole grain macaroni or linguine, using Greek yogurt in place of sour cream. Sometimes I'll add other ingredients (see Tips & Suggestions) or serve it on a bed of organic baby kale or other greens. This recipe is totally customizable. Have fun with it & add things to it that you like & who knows... you may create a whole new recipe that your family will love!
Za'atar is a spice blend found in many Middle Eastern dishes & is uniquely earthy, savory & extremely aromatic. This dish I created is very popular at my house. I mostly serve it in the spring, summer & early fall months, as it is at it's best when served barely warm or at room temperature.
