Easy Stuffed Mushrooms

Easy Stuffed Mushrooms

I love to make these appetizers a few times during the holidays, as they're a tasty way to use up leftover poultry & stuffing. They also are a hit when served at family gatherings or parties!

Serves: 4 to 8

Apple Butter Sweet Potatoes

Apple Butter Sweet Potatoes

Truly scrumptious, healthy & easy to make. A fantastic side dish for the holidays or any time of the year. If you need to feed a crowd, just double, triple or quadruple the recipe & you're all set!

Serves: 3 to 4

Authentic Greek Tzatziki

Serve this, as a refreshing dip, with hunks of artisan whole grain crusty bread and/or bread sticks as a snack or appetizer. The Greeks also serve it with roasted lamb or any kind of grilled meat. I also love to serve this with an assorted vegetable platter & it's even good as a healthy sandwich spread. The uses for this sauce/dip is really limitless!

Serves: 3 to 4

Broccoli Stir-fry with Special Sauce

Broccoli Stir-fry with Special Sauce

A delicious vegetarian dinner for #MeatlessMonday or #FoodieFryday, a favorite in my house especially when served with Fried Bananas on the side! You could also leave out the Fried Bananas & just serve this as a vegetable side dish with meat, chicken or seafood.

Basil Ranch Dressing

Basil Ranch Dressing

It's so much healthier for you & your family when you make your own salad dressings. Not only will you eliminate all the additives found in commercially prepared dressings, but you also have full control over the quality of the ingredients. I think you'll find this one especially tasty!

Yield: approximately 2 cups / 8 servings

Roasted Brussels Sprouts

Roasted Brussels Sprouts

Roasting these healthy green jewels is the best way to cook them, not only for excellent flavor, but to keep in all the precious nutrients!

Serves: 4

Roasted Carrots

Revised & updated 1/18/2021 - I think the reason a lot of people, especially kids, don't like vegetables is because the way they're cooked leaves them bland & tasteless. Not only that, but most methods cook out all the nutrients, but roasting retains all the precious nutrients. You've never tasted carrots, or any vegetable for that matter, until you've roasted them. They are amazingly sweet, nutty & oh so delicious... I guarantee this will become your preferred way to cook & eat them from now on!

Serves: 2 to 3

Peach Melba

Peach Melba

Bright & cheery, smooth & creamy, with a nice fruity flavor & just a hint of tang makes this my very favorite dessert. I'm sure once you taste it, it'll be your favorite too!

Serves: 2

Herbed Buttermilk Ranch Dressing

Move over commercially prepared ranch dressings, there's a new, easy to make dressing in town & it's comin' for your salad! Everyone I've served this to says it's the best ranch dressing they've ever had & ask me what brand it is. They're surprised when I tell them I made it from scratch & beg for the recipe.

Yield: 6 - 1/4 cup servings

Roasted Broccoli

Roasted Broccoli

Broccoli is one of those vegetables that people either love or hate. Once they try it roasted though... a lot of those haters change their mind. Roasted broccoli has a whole different taste & smell than broccoli cooked any other way. Broccoli is considered a superfood & something you want to have in your diet regularly.
