Ingredients: 1 Tblsp butter; 1/2 cup roughly chopped Vidalia onion; 2 - 6 oz boxes of Horizon or Annie's organic mac & cheese mix.; Organic milk or plain, unsweetened almond milk & butter needed to prepare mix.; 1 Tblsp La Victoria Green Salsa Jalapeu00f1a extra hot or Mrs. Renfro's Jalapeu00f1o Green Salsa

If you love Mexican food, this quick, easy, Cheater's Mac & Cheese makeover is right up your alley!

Serves: 3 to 4

Ingredients

1 Tblsp butter

1/2 cup roughly chopped Vidalia onion

2 - 6 oz boxes of Horizon or Annie's organic mac & cheese mix.

Organic milk or plain, unsweetened almond milk & butter needed to prepare mix.

1 Tblsp La Victoria Green Salsa Jalapeña extra hot or Mrs. Renfro's Jalapeño Green Salsa

Directions

1 Heat butter in a small frypan on medium to med-high heat.

2 Add onion & saute till translucent. Set aside till mac & cheese is done.

3 In a 5.5 quart pot, prepare both boxes of mac & cheese according to package directions, but only use 1/2 the butter called for on each of the boxes.

4 Add green salsa & onion, along with all the butter from the pan. Heat & stir gently over low heat for just a minute & serve.
