Madras Curry Stew

Madras curry is a fairly hot blend of herbs & spices that originated in southern India. While you can create your own Madras curry spice blend & sauce to cook with, this version is made with a delicious organic premade sauce that cuts your cooking time down to a minimum. Best served warm, not hot, on a bed of Jasmine Rice & accompanied by heated Naan bread smeared with my Peach Apricot Ginger Spread, making a spectacular meal!
1 lb ground beef (preferably chuck, grass fed, pasture raised)
1 - 12oz jar Seeds of Change Organic Madras Sauce (see Tip# 1)
1/2 red or Vidalia onion, chopped into large bite-sized pieces
1/2 large or 1 small zucchini, slice in half lengthwise & then cut into thick slices (see Tip# 2)
1/2 red bell pepper, remove seeds & cut into strips
1 to 2 pieces of Naan bread (see Tip# 3)
Peach Apricot Ginger Spread - needs to be made 24 hrs in advance (see recipe in the Bakery, Breads & Spreads category)
1 Ground chuck & Madras Sauce.
2 Prepped vegetables.
3 In a 4 or 5 quart Dutch oven, cook & stir ground beef over med-high heat till cooked through (no pink). Drain off liquid & return to pot.
4 Add the entire jar of Madras Sauce & stir till combined. Cover, set aside & let sit 45 min to 1 hour to absorb the sauce.
5 While waiting, cook the Jasmine Rice & set aside (see recipe in the Rice & Grains category).
6 In a frypan; heat butter on med-high heat till melted & hot. Add onion, zucchini & bell pepper. Fry till starting to brown, stirring occasionally.
7 Add vegetables, along with pan drippings, to meat sauce. Stir till combined. Cover & simmer on med-low to low 2 to 3 minutes, give it a stir & remove from heat.
8 Heat Naan bread according to pkg directions, add spread, cut into fourths.
9 Add some rice to each plate & make a well in center.
10 Spoon desired amount of Madras Stew in the well. Garnish with cilantro, if using & serve with Naan bread on the side.
Tips & Suggestions
1 Most large supermarkets & natural food stores carry Seeds of Change Madras Sauce in their International food section, near other Asian foods.
2 You can replace the zucchini with another vegetable of your choice.
3 If you're not familiar with Naan bread, you're in for a treat. Naan is a delicious, soft, hand-stretched flatbread made in a traditional fashion in a high heat tandoor oven. Most larger supermarkets carry it these days & it's usually found, prepackaged, in the bakery area. You can even freeze the package, as is, for months & the bread still tastes fresh when you defrost it!

I usually feel like I should be making curry sauces from scratch because I’ve no idea how good a pre-made one is likely to be. Thanks for the tip about this one – I’ll look for it today!
I know what you mean Beth, I’m always hesitant to go with something premade. But occasionally I get brave… if the ingredients are organic & they look like a nice blend I’ll go ahead & try it out. Let me know how you like it!
